It's not a stun, it's like an offensive version of foresight i.e. a massive accuracy debuff.
Sabine's Demolish has "can't be evaded," which means there is no accuracy/dodge check, which means Blind would not affect it. This happens with Foresight, too - R2D2's flame AOE can't be evaded, so it will hit characters through foresight without triggering it.
