I still don't understand tier 7. Is it that we have 2 days to beat it and unlimited tries even when my rooms die? What happens if we don't complete it in 2 days?

You have two days to beat it with the toons you have in your collection. Once one dies, it can no longer be used. You don't get to keep on using them. You are not limited to 5 battles. So if you have 30 7* toons you can do six battles. If you don't finish it in two days, then you do not get any rewards.

I solo P1 Tier 7 everytime with this team(all ftp): Teebo L/Phasma/QGJ/EE/GS. You can use AA/Fives/Chirpa instead of GS if you want to use GS in other phases.

3 Key players are teebo, EE and QGJ.

Phasma can be substituted by Fives, dengar, Jawa or Chewy also if you want to use Phasma in other phases.

@Roc_Laivindur Gs is better for the P1 because his assist won't add tm to pig capt, Rey's specials do, but I've seen people use Rey in place of Gs. Throw all potency mods on Teebo (preferably get his potency over 50%) , also QGJ at least gear 10 if not 11. Also you need to omega qgj basic, EE basic, Teebo basic and leadership, phasma's specials and GS special and unique.

The Lordskunk guide was not helpful. It has information you can get in game about the foes you face, and the advice on teams makes no sense in most parts. For example: they recommend high TM manipulation squad for phase 3 and 4, yet none of the big TM manipulation heroes are listed.
