I used to think this, too! They're all robots, robots don't have genders, right? Then a friend of mine who is obsessed with Star Wars canon and legendary canon and expanded universe canon and and and… told me that Star Wars is an Apex Technology universe, meaning all technology is maxed out and won't go any further. Most droids that we see are self-aware and sentient, they have identities and have programmed genders because that makes them closer to human, and, as an Apex Technology universe that means they were deliberately designed this way because that's "more advanced" than a droid without an identity.
The rule of thumb is that any droid with a personality has a gender, while any droid that doesn't (Gonk droid, mouse droid, or in this case probe droid) doesn't.
I'm paraphrasing what he told me because I honestly don't care about canon anywhere near as much as he does. But it was interesting nevertheless.
