So, I've unlocked 5* Chewie. Now what?
By that I mean, is he like Bossk or Sion, that can be "viable" at lower stars? With proper gearing and Mods, where would he fit? Any help would be appreciated .

There's no need to be a jerk about it. It might be the first legendary this person has unlocked.
That said, Chewie pretty much needs to be with Han Solo for maximum effectiveness. The typical "meta" rebel team is Commander Luke, Han Solo, Chewie, R2D2 and C3P0. If you're just unlocking Chewie I would guess that you don't have 3P0 yet, but you can sub in other quality Rebels (Old Ben, Ezra, etc) until then.
His %health damage on all attacks means he can still dish out great damage at low stars, though you will still want to gear him up as much as possible to increase his speed and survivability.
