What kind of starting over would you do? I have lots of solid teams... why not pick one of those? Which characters do you think I should go farm for my arena team?

Your roster is so amazing that i mistook your post as a joke.
With your roster, i would use:
CLS (lead), r2d2, han solo, leia and old ben
Keep gearing up thrawn as soon as possible, even at 5* or 6*, a g11 thrawn can do his fractures for you very effectively. When thrawn is ready, replace leia or even han solo based on your preference, but han solo is a bit better.
Also, join a guild that does heroic raids because you will need an end game tank, Geberal Kenobi. He is also viable at 5* or 6* at g10 or g11.
Once you have GK, you can replace old ben, and you may want to consider putting him as lead and replacing someone for zeta Barris.
