I use them both, along with Ackbar lead, Lando, and EE. They both have their benefits.
SRP: super tanky, self revives if buffed (which is most of the time), 2 turn taunt with 3 turn cooldown for near constant taunting, gives TM on basic, inflicts AoE offense down, gives speed up on death (which can happen frequently if you buff him and kill him off enough).
STH: gives lots of TM on taunt and when damaged while taunting, removes enemy TM, hits harder.
As for which one is better, I'd say SRP. STH seems fairly squishy for a taunter, and his cooldown is a lot longer. Although the TM boost is greater than SRP while he's taunting, it probably doesn't add up as much over the course of a battle as SRP's (I haven't done the math on this so please correct me if I'm wrong) due to the fact that his basic is guaranteed to give 15% TM. Not only is the taunt and TM gain better, SRP is much more durable because of a high max health/protection and a good chance of self reviving. His speed up on death adds even more to his TM game too. The offense down that he inflicts is an added bonus, and his relatively low damage output is supplemented by offense up.
