You need five toons for each star level to be able to challenge. EP unlocks at 5*, so you will need at a minimum, five toons at 5* or above to unlock. To get a 7* EP, you need five 7* rebels.
As far as gear is concerned, I unlocked 5* with most of my rebels at 7* with a mix of gear 8 and 9. My 5* rebel kept me from try to get 6 or 7*.
My daughter also unlocked a 5* EP, she was only level 75 or so at the time, and had a mix of 3 7* rebels and 2 5* rebels. Gear was 8, with Lando gear 9 and Luke gear 7. It took her RNG luck to get the 5*.
MolEnanus, I would take K2 to 6*. That will allow you to challenge for a 6* EP. I don't think you'll have time to get Leia to 7*.... Then focus on gear, invest as much as you can getting to gear 8 with Wedge, AA and K2. Getting STHan to gear 9 will help as well. Don't ignore mods, be prepared to swap your 5 best sets over to your rebels for the event.
If they haven't tuned the event for lvl 85, then you'll have a shot, though you might need RNG luck in your side, as five gear 8 is cutting it close.
