Ewoks can take down pretty much anyone except a ZBarriss squad. The reason you don't see them is quite a few are shipment only and wicket is a LONG "farm" that can only be obtained if you already had a really solid Ewok squad. Before the ATST event there was no reason to gear them(except maybe Teebo & Chirpa for raids), unless you are a big murderbear fan, and even with the event it's debatable if it's worth the cost.
