The old speed meta got everyone to farm the same glass cannons. So now the dominant strategies to deal with the new meta, largely based on RG or Han, are variations of still using glass cannons to win (because that's all people have right now and no one wants to pivot from these characters they spent months maxing out).
However, I think a better long term solution will emerge and that will be those people that think outside the box to develop new characters and squads. The fundamental counter in this game to taunts (and stealth) is AOE. Think Phasma advantage followed by four AOEs and then her Fusillade (that's five AOEs in a row that will all crit). Hint, in addition to the Phasma turn meter gain, the very farmable Magmatrooper's AOE removes 30-60% turn meter, practically ensuring you could run off almost your full squad's AOEs before your opponent could move. I don't see very many of the popular glass cannons surviving that kind of assault.
It's pretty hard to convince people to run aoe teams since dooku lead gives offense up and dodge.If you're hitting 5 in one go the odds of getting at least one dodge and offense up is pretty high. Though I agree that the main strategy people are using against him is the one that he's supposed to be a counter to.
