ymbcdriqlpzh​  If the sims you want to find aren't on the MasterController list, then they're gone, unfortunately.  MC will find the sims if there's enough data left over to reconstruct them, so if it's not listing them, then there's nothing you can do, other than load a backup save if you ever made one.

For the other question, you can't build a school and make it into a rabbithole.  The school shells are single units, so you could take one from one world and place it in another, but you can't create your own.

What you could do is build the school you want, then place the rabbithole inside the building.  If you want to know how this is done, check out this thread:

Look for community lots where the description says there's a rabbithole in the basement, for example build F73 has the business rabbithole in the basement and is otherwise a usable building.
