I usually play with aging off, too, but that doesn't mean the sims are going to hang around forever. Mine get aged up with birthday cakes or MasterController. I sometimes turn aging on when I have some elders around and want them to go "naturally," but sometimes I use MasterController for that, too - it's harder for me to decide the moment a sim is going to die, though.
