Also, because I didn't see it mentioned here, you can adopt a horse by phone. I've adopted a foal this way. In Appaloosa Plains at least you can also click on the cowpokes home to adopt in that way.
I didn't realize the horses I saw wandering around were wild. I saw only two on the first day of playing and haven't seen any since. =/
