Once my Sims have a regular income, a nice home and enough to cover bills, I hoard it. My Sims tend to have a lot of kids once they're established, and it's nice to be able to move spares out with a fair sum.
Another thing I like to do is use it for donations to the town or charity for less fortunate Sims. I'll spend my active's funds in edit town to add some new equipment to a park, or items for another household's residence if I notice they're lacking something I feel they should have.
