I have dragged everything into the trash that is sim related but I don’t have a library folder? Or any of the things listed in the clean uninstall? Does this mean it’s done correctly?
@jacindaham The game's program files are what Origin is looking for, and those are what you dragged to the trash. But the hidden library files are there too. Every user account in macOS has its own Library folder. Open a Finder Window, click Go in the upper left corner, hold down the option key, and you'll see it.
And yes, you do need to go through the clean uninstall process, or the base game will almost certainly not launch.

If this all works correctly the expansion packs I would like to download are: generations, pets, seasons, University life limited edition, high end loft stuff and town life stuff. World adventures and ambitions are a maybe, I would prefer the other ones though. Are any of those bad ones to install? I don’t mind not installing the difficult ones I would be so happy just to have the base game and a couple expansions!

It didn’t work. I can get the game launcher up now which is a bonus but it says I have a connection issue, but I also wasn’t sure where to find ‘deviceconfig’ for the graphics card. I might be acting completely dumb.. sorry

@jacindaham If you're getting this issue:
then it did work, you're fine. The license server error only shows up when people have installed no more than the base game, World Adventures, and High-End Loft Stuff. As soon as you install a newer pack, it will go away.
The deviceconfig file is in Documents\Electronic Arts\The Sims 3. That's my fault, I realized I made a master set of instructions for Intel cards for someone who'd already posted the contents of deviceconfig, so they knew where to find it.
Among the packs you own, the only one that should cause any problems is Ambitions. The others should install fine. If you do want to install Ambitions, there are two workarounds needed to get it running properly. The first is easy: create an alias (icon) for the pack in Applications\The Sims 3, alongside the alias for the base game.

The second is to copy a folder from Ambitions into a folder for your newest pack by the date EA released it. So among your packs, that would be University Life if you install all the others. This video shows where to find the folder and how to copy it over.
If you want to try to run all your packs, what I would do in your situation is install University Life, test, intall Ambitions, apply the two workarounds, test; then if everything is fine, you can install your other packs without worrying too much. By the way, the other packs that cause issues are Late Night, Fast Lane, and Outdoor Living, and they need the same two workarounds as Ambitions does.
