@cavilesn In the normal game, you can't edit a sim's career outfit, but you can add a second outfit by using the dresser to Plan Outfit. And you can use a cheat to get access to all outfits as well. Bring up the cheats console (crtl-shift-C) and enter "unlockoutfits on" without quotes. Then Plan Outfit, and you'll see all locked articles of clothing available. (Be sure to activate the cheat before you enter Plan Outfit.)
If you want to edit a sim's primary career outfit, you need a mod. NRaas MasterController works nicely. Once you install it, click on any sim (it works on both active and inactive sims) and select NRaas > MasterController > Stylist, then select the Career category. Or, if you don't see the sim whose outfit you want to edit, click on City Hall and select NRaas > MasterController > Sim > Stylist. Then use one or more of the filters to narrow down the list, or click X to get a list of all sims in the entire town. Either way, you'll still need the unlockoutfits cheat to use the locked outfits, but everything else will be available.
