I think you would still be able to create regular lots. The subcategories would act somewhat like traits and would add a little something more. Like maybe a book cafe would attract sims that like to read or even write books not just coffee lovers. And maybe they could add some specific lot interactions like a book reading night or a book exchange/donation day, or specific coffee recipes, something a bit more that would enhance the experience. Bars have specific events for each day of the week, maybe we could have something similar for other lot types.
