It's not wax that sheep produce, but a substance often referred to as "waxy" or "wax like". It's called Lanolin and it helps the sheep shed water and stay dry. It's often used in cosmetics, though many people are allergic to it.
I would love to see sheep and goats added.
I think it would be neat if spinning as a skill could be added. Using sheep/llama wool to spin on a drop spindle or a spinning wheel. In the beginning of the skill you could make yarn for knitting, and then as the skill increases you could make thread for cross-stitch.
Sheep's wool can also be used for felting, which could also be a potential skill.
Wet felting uses water and soap, and I think the washboard and bucket from laundry day would work well for that. You can make all sorts of things, beads and balls (for pets or children) are easiest, but you can also make larger things like bags and hats.
Dry felting or needle felting is great for making shapes and really is like sculpting, just with fiber instead of clay.
Thank you for the clarification on lanolin. I never had sheep but I worked at a zoo with some and I remember some of them had very thick waxy buildup all over them. I mistook it for wax. I've never heard of felting before but I like that idea.
Please excuse me for posting this link in more than one thread, but I just discovered some CC for Sims2 that is absolutely amazing. Sun & Moon added goats, sheep, geese, ducks, chickens, pigs, cows, horses, etc and they can produce foodstuffs and products. It is very very cool. She also added griffons and dragons. I would love for pretty much all of her CC to be incorporated in some way in to Sims4. Not sure if she would allow conversions though. Would be even better if EA looked at what she made and created their own version.
http://www.medievalsims.com/forums/viewforum.php?f=240 is the link that has multiple threads of her CC.
This thread in particular is pertinent: http://www.medievalsims.com/forums/viewtopic.php?f=240&t=10791

Many more ideas-- I pretty much want everything from this converted to Sims4.

Also, I would LOVE hammocks. They could be in a ship-type setting since ships often used hammocks for beds since they didn't slide around like actual cots.
