I'd prefer Nectar Making as a skill because there is a whole process to making it and a certain aesthetic that goes with it. Not only would we likely get a wine region as a neighborhood most likely places like Napa, Tuscany, or the Rhone region of France. We'd get a defined lot called the Nectary, a bunch of new growables, probably new lot traits. But then you think of all the things like wine caves, the vats, bottle racks, the machine to squash the grapes for purchase in buy/build. It lends itself far more beautifully to skill building and overall game play in the game.
I wouldn't mind a soda machine in game though it would be cute. I personally have one in my kitchen. It takes zero skill to make the soda though I just press a button to carbonate the water then add the flavor packet.
