@lousymare I'm glad you're enjoying the challenge! To your points:
- You should be able to make popcorn crickets with cricket flour and vegetables... once you have a stove and countertop.
- I went ahead and updated the language to say neighborhood instead of lot. I was trying to figure out a way to say that you could explore the surrounding landscape in the neighborhood, but not travel to other lots in the neighborhood (I.E. you can forage around the outskirts of the neighborhood, but you can't travel to a bar or library). Basically, no using the phone/map, no loading screens.
- You can collect plants from your neighborhood! Plants, crystals, and fish are allowed.
- I went ahead and tested out placing the shelter on a 40x30 lot, and experienced the same problem as you... the first time around. The second time I attempted to place it, the game got everything except the glass dome roof. I also will make a note in the challenge to try placing it again if the first time doesn't work. Absolutely no idea why it does that.
- I don't think there's anything wrong with the More Woodworks mod. I don't think it's a mod I would specifically recommend for the challenge, but I don't think it goes against the spirit of it either!
- Regarding power, I've done some testing and I believe items kept in your household inventory do not use power. I recommend storing any powered object until you need it, to allow your power surplus to build up, and then put it away again when you're done using it! Consider it to be keeping them "unplugged." I may go ahead and change the rules to allow you to buy power generating objects more frequently, however.
- I've flip-flopped on what to do with the bee box-- it was originally included as an item in the challenge alongside the insect box, before I realized that it meant another pack everyone would need to have. Also, it turns out honey is a super filling food for your Sims, and I felt like that was a little too easy-- in reality, guzzling down a jar of honey doesn't seem like a healthy way to eat. :D Right now it's a milestone reward for animals and I think I'll leave it there, but if you really want it I don't see why you couldn't just grab it as a skill item in your game. You can go ahead and trade the candlemaker for the juice fizzer.
- Finally, if you need a way to consistently make trash...
Thank you for your feedback!

Spoiler
try diving for meals until you get an item on a plate, then dive for deals. When the dumpster is empty again, drag the plate to the dumpster. Repeat. Never allow your Sims to wash glasses of water or plates, always throw them away.
