Getting the 'perfect' image can take quite some time unless, I guess, if you're one of those amazingly talented creative types that somehow know exactly what parts you need and precisely how to use your software to slip them effortlessly into place.
From what I know of thumbnails they just need to be attractive, clear, and enticing which I think all of yours, including the latest, have been. You've already put so much effort into creating the imagery in the movies I can't imagine you would have too much difficulty finding a suitable still image. The only problem I've had (I also use screenshots) is that the lighting isn't always good enough but I don't think that should be a problem for you, having already created exactly the look you want in the videos.
Bottom line, if something is becoming a chore and detracting from the fun of making these videos, don't do it. :)
