I could be wrong, but this reads like a you issue, and not a Discover University issue. And I don't write that to be disrespectful. First, you have the option to turn off auto-aging in your game's setting menu. This change does not have to be permanent, and can be isolated for the duration of your sims' schooling career. Secondly, a Discover University semester is less than a week in game. Provided that you can take a max of 4 classes per semester, a degree only takes three weeks in game to obtain should you take the max credits and enroll continuously after each semester ends. I understand each simmer has their own story lines to play out, so completing degress can differ for everyone, but it for sure doesn't HAVE to take your sims life time to complete.
Pro-tip(s) - as soon as your sim is enrolled, complete their homework, draft the term paper and capture information for the presentation. Off bat, that gives you a head start and leaves you room for paper and presentation refinement before the first day of classes even begin.

I 100% agree on this. The player has the option to turn off aging in the settings while they do the University stuff.
