I'm not exactly sure what the issue is so a little more info would be helpful.
If you are trying to build the singing skill, the quickest and easiest way is to have them sing on the karaoke machine. As you level the skill up, new song categories will open up. When you start, there are only 3 categories (House, Jazz, Pop) and Rock, Country, and Disco opens up later. I just queue several songs in a row since you can't select a song category while you have a sim singing on the machine.
You can also build the skill by practicing singing on a microphone and the Sing Songs social on a sim (I forget if that shows up if you haven't got any singing skill or becomes available after you've leveled up the skill a few levels).

@CGrant56 Thank you for the answer, but unfortunately the problem is that no new song categories can be opened because there are no new ones. So no matter which level I reach, no new categories appear. My Sim sings on the microphone and keyboard and has already climbed to level 5, but I only have one song category to choose from, namely folk, although I would actually have to be shown pop and jazz.
Ok, I think I understand now. You are trying to sing songs at the keyboard. To get more than just the folk songs you have to level up both singing and piano to get the other song categories. On the keyboard or piano, you only have 4 categories with both skills at level 10.
So what you need to do if you want to sing songs at one of the musical instruments is to level up both singing and the musical skill (Piano, Guitar, etc).

- @CGrant56 Thank you, but that's not the problem. I have the right level. I'm also shown on the board that I'm now e.g. Jazz at the microphone. But when I tap "Sing song," I'll see only folk again.
You're losing me I think. The karaoke machine, musical instruments and the microphone all have different song categories but they do share some. For instance, folk songs are not on the karaoke machine and disco is not on the piano or keyboard. So just because you see Jazz on the microphone does not mean that it will be present on the keyboard unless you've also leveled up the piano skill enough so the Jazz option becomes available.
You've said that you singing was level 5. But what is the sim's piano skill level? You have to have both skills leveled up to see more than Folk on the keyboard or piano.
