You do only have to click on your Sim to research the various emotions when you have a task to do so. Perhaps you weren't looking in the correct spot?
Some gigs in the Actor career require you to "research angry emotion" before going on set. In order to research the angry emotion, it specifically tells you that you have to get into an Angry Emotion and perform Mean interactions. Just clicking "research angry emotion" does not complete the task, nor does it put the Sim in an angry mood.
