@avalonniasims   What you are seeing is pretty normal for knitting when the knitting skill level is low to mid-range.  Once they get to the higher-level skill levels, they usually don't get the option greyed out anymore nor the negative moodlets associated with it.  And as @Wndblwz said, the moodlets will tell you why usually as well as how long you have to wait until the sim will knit again.  It just takes a little patience.
