From what info I've been able to find, there are a few things you can do here. I've listed them in order from least amount of work to most amount of work for you, but feel free to try them in any order.
1. wait a couple of in game days and see if your Sim can then re-enrol into University.
2. roll back your save to right before your Sim graduated and play through, making sure that the Sim goes to graduation.
3. Use the cheat here (https://www.carls-sims-4-guide.com/expansionpacks/discoveruniversity/cheats.php) to cheat the degree your Sim has (I believe you'll need the All Cheats Mod for this), then use the cheat careers.remove_career University_BaseCareer to remove the University student "career" from your Sim. Wait a few in game days, and everything should be OK.

- @MuirDragonne Will this work on Xbox console? It has been like a year or two since she graduated in game, so 1 is out. As for 2, I don’t have a save for that. I’m on the same save file since I started playing in October of last year. As for 3, it says I can’t turn on cheats without losing achievements? Does this include collection completion? Thanks!!
Unfortunately, since you need a mod to do the cheat, you won't be able to try the cheat route. Unless anyone has any other ideas, it sounds like you may be stuck. I'm really sorry.
