I tend to have aging off for my games. The biggest reason is that I have multiple families on each save file, and pick and choose who I want to play with that day.
I also keep aging off so I can have all my Sims age around the same time. I do have some single Sims, and some families, but tend to skip some stages to get the Sims where I want.
I don't play Sims that often, but I do have my single Sims get married, or keep them single to switch up the game play, so not everything is the the same. I often have my Sims that do get married have kids, and age them up to children pretty much right away. During that time I tend to have the married Sims have kids, or other families have kids, so I can age them up in groups. From there I can decide who stays single, and who marries.
One thing I also do it switch up the dynamics in families. I have married couples with the kids, and then some families where siblings live together, and some where my single Sims may adopt a kid, or have a science baby.
I plan to age up my older sims, so I can still keep aging off, but have different generations in my game. I do like my first Sims, but I also want to have some progression with the game. Some of my favorite Sims may become vampires, and watch over their descendants.
I'm a rotational player: I have many played households (in many different saves, and in all of those saves I have many played households in the same save; I try to limit the amount of played households per save though, so that there wouldn't be too many in one save, so that I have more time and so that it's easier to play them rotationally). I enjoy the variety, to have different types of households: I have families with children, some of the families are generational families (grandparents living with the family), small families, big families, couples, single living alone -households, siblings living together, friends living together etc.
I also enjoy to have my played households to be connected & interact with each other: they might be relatives, or they are friends with each other.
I like my Sims to age, but I prefer to keep aging off and age my Sims at my own pace when I want (so I use a birthday cake to age them when aging is off).
