It sounds like you have the logistics pretty well covered. For #3, if I am understanding your plan correctly, you will likely just need to use the cas.fulleditmode cheat before you go into Manage Households to edit the preexisting households. That should allow you to change pretty much everything.
I would just say, sometimes people find these simself saves more uncomfortable than they expected, so be emotionally prepared for that possibility. And whatever you do, be sure not to get mad at your real life friends and family for the things their counterparts do in the game! (I joke, but only partly.)
