I go through the current list with new Sims and feel underwhelmed and bored at this point with the careers we have. CC careers just feel incomplete with the lack of reward objects and chance cards so ...

I too would like to see some more careers - though I do not believe that the creators have been idle. i saw for a couple years how fans clamored for pets in the game and begged for it. now we have pets, and already a contact pack for them. Basically they're not adding careers per se, but adding something always.
For some additional careers:
Educator (two career paths: Teacher (teacher - professor)/ Administrator (prinicple / dean / super-intendant)
Construction
Military
Mechanic/Repairman
