I'm not entirely certain, not to discredit SimGuruLyndsay - there definitely isn't any "legit" way of switching branches.
There is another careers command in the code I'm sorting out right now. If I can get those values right it may very well be able to switch the branch.
You're right - you should be able to use the career cheats to get back to the branching choice. If you cheat to the level of promotion that would prompt the branching dialog you'll get to choose again. There is not a way to switch branches without cheating right now though.
