Club get togethers
How many times a week do you guys have your sims who are in clubs get together?

That depends on the type of club. With family clubs, whenever there is a holiday or birthday (so hardly once a week), with friends whenever I remember, with work-clubs, whenever I decide to "go to work" with my sims (I have created work places for all semi active careers so I can go with my sims to work by choosing "work from home" then go to their "office" and start a club gathering).
