Well I can't help you here myself since I too am thinking of making a bakery and would also like to know, but for your last question I've noticed that in the few times I've ever visited retail stores, and between long spans in gaming mind you, in all those times I've not seen any items that were bought restocked again. Bought clothes on mannequins remained unclothed and baked goods in the display cases weren't filling up after emptying. I'd presume that it was never meant to be restocked and the best course of action there is to plop the same store again from your library so all the sold items are back again with the new version.
