How do you feel about the demise of your sims?

It really depends. I usually play with aging off, but I do age my Sims at my own pace that way. That includes death, though it somewhat rare for me to kill them off.
On the off chance it was an undesired death, frustrated. A planned and progressed one, like I finished a book. All sorts of other emotions can tinge it, too, but generally speaking it depends on the circumstances.
