I find it easier to play with aging off, I wouldn't remember to turn it off/on whenever, or what family/save I'd want it off/on. I never play with elders, I find their idle animations annoying, and I don't want to get YET another mod to remove YET another annoyance in the game.
I invest a lot of time on my sims, as we all do. Some of them have 20+ skills maxed, topped off several careers and done many aspirations. If they get old and die, that time is wasted. Around 80% of my sims are vampires, I keep aging off for the few that aren't.
Only problem I can see with aging off for all sims: babies in unplayed households won't grow up either. Don't really know how to handle that.
