All good ideas, I would add some other things to your list, mainly with the purpose of pack integration and giving more functionality for people with more packs.
Dine Out: Add standard menus for all the international food we have, Mexican, Indian, Japanese, Vietnamese, etc. Allow playable sims to work in the restaurant as cook, host, etc.
Outdoor Retreat: add rock climbing spots and a swimmable water area preferably with a waterfall
My Wedding Stories: Wedding photography poses
Jungle Adventure: would be nice to expand the archeology skill to find other artifacts in other worlds as well, but it would be nice if they were world specific, I think a small collection of about 10-15 artifacts per world would be nice. Also, would be nice if we could exhibit collections and charge some entrance fee.
Laundry day: I would like a drying rack that is attached to the wall or ceiling so we could dry clothes indoors without it looking weird.
Horse Ranch: I second the request for a mechanical bull, allow the nectars and new dishes to be added to restaurant menu.
Get to Work: Allow sims to visit the hospital for check-ups, vaccines, call a doctor when they are sick, etc. Make policemen appear round the neighbourhoods doing their rounds, allow sims to visit the police station and make a complaint if something is stolen from them, or just call the police for emergencies of some kind or if your neighbours make too much noise. For bakeries, I would love if they separated the breads into their own sections, separate from the pies and cakes and gave us proper displays for breads. Allow us to work as baristas and sell coffee as well in bakeries and maybe adjust the menu for the coffee cart. Let us make grocery shops and give us the useable grocery and shop displays, also let us sell more than once apple at a time.
Seasons: I would love if they reworked some of the plant meshes and gave us more accurate looking ones. Carrots and tulips don't grow in a bush. Also allow NPC sims to use other colour umbrellas not just black ones and more umbrellas swatches would be nice.
Parenthood: Would be nice if parents would occasionally have to do things for children like bake some cupcakes for a school fair, fork over some money for a class trip or school pictures, attend a teacher and parents meeting, etc.
Snowy Escape: Tea ceremony, allow the short tables to be used in restaurants, Japanese painting style in the paint skill, allow us to choose the kind of slippers sims wear indoors.
