Though fun fact, the each lot function is same in each type.
Markets have food stalls automatically filled with vendors. If you put those food stands in other forms (Community Garden for example), they will still be automatically filled with vendors. I frequently use this to have my Community Garden have a produce stand.
Not to mention that you will see sims frequently dumpster diving on these lots. I get the intention that the lot is supposed to start off as some sort of unused landfill, but I like to use the default state as a boring park.
