Flag Freeze their career with MCCC before editing them. I have all the special NPC's flagged this way now. Don't trust the game to ever keep these Sims the way they are. Yesterday I had to go to the effort of cheating back the original village Mayor in Cottage Living because I had edited her slightly in CAS and the game just decided to replace her for some random townie.
Oh, thanks for the tip! So many things in MC Commander Center I have been scared to use, but will start using ^^
