Freelancer gets a bit repetitive, but is entirely open-ended as to when I take gigs and how many, and my Sim can knock out a job super fast anymore. Money at this point is almost too easy.
Style Influencer is a rabbit-hole by default, but also supports a robust work-from-home option with varying responsibilities. I use it for a Sim in a couple with a new child. He can take the rabbit-hole option when his spouse is off for the day, or work from home (easily) while primarily supervising the child. He makes more at Rank 10 (plus raises) than his Culinary 9 spouse, and that isn't counting books and paintings on the side.
Sorry to derail but wanted to highlight those two nonstandard career options as well.
