If I have more than one story to the house, I try to put the staircase there for one thing. Nice paintings, family snapshots, other wall decor, lights, a floor runner is a necessity in my opinion, a slim table with flowers, statues, perhaps the small pile of books, fishbowl, etc.
And if there is a door to the outside at the end of the hallway (which is usually the case in my Sims' homes), I like to put an end table there with a plant, a mirror above it, perhaps a backpack sitting next to it and/or the umbrella stand. If not an end table, I'll put the coat rack hangers under the mirror and shoe rack below.
It just depends on what rooms the hallway leads to as to what decor I'll use for it. If the hallway leads to children's rooms, and they're artistic, I like to put their drawings and holiday crafts on the wall next to their rooms. Depending on how wide the hallway happens to be, I've sometimes put the smaller aquarium from Spa Day (or maybe that was in Dine Out?) in a hallway. I've put a chess table and a couple chairs in a hallway as well.
EDIT: Wanted to add, that if you do have a staircase in the hallway, I like to knock out the wall part and put a desk, computer, chair, etc. under there. Sometimes you can even leave the wall part of the stairs and if it's tall enough, put a door on it and add a half bath with just a sink and a toilet or just the toilet in there. :)
