Mostly I enjoy playing my one main family (on "long life"). I keep them fresh by switching out aspirations and careers. And new SP/GP/EPs often help too (as now there are even more things for them to try.)
However, sometimes I get the urge to do something else. I'll do a "legacy challenge" or a "rags to riches challenge." Or I'll go on a building bender. Or I do a "no custom content family" to make sure that a new update isn't going to cause problems.
And then sometimes I just take a break. Right now I'm on a break waiting for the new update to require that once again I have to update all my mods. (I don't blame EA for this happening. I just accept that it does because EA can't test all the creator's mods but they *need* to change things that sometimes mess up the mods.) I have a "date" with my godson every Tuesday night and every other weekend to play Minecraft with him (in a Realm, with discord so that we can talk to each other while we play.) We just started a "new environment" so I've actually been playing between our games (which is the *only* time he can play because he doesn't have constant computer access.) I'm trying to get our place set up so that it's not so frustrating for him. (He's only in 3rd grade, so he hasn't developed some of the "how to handle frustration" techniques.)
