I have a decent number of mods and CC, but I haven't reached the point where "Vanilla is drowning".
Here's the full list of mods I use and who made them:

UI Cheats
Andrew Pose Player
Autonomous First Kiss, Breakups, and Proposals (for anyone curious, those are 3 separate mods)
Faster Showers & Baths
No Auto Drinks or Thirst
Bake Cupcake Machine Items in Oven
Less City Living/Island Living Names
Simda Dating App
Food Delivery
Pregnancy Overhaul - No Walkstyle
Release All the Ghosts
Ultrasound Scan
Teleport Any Sim
NPCC
Know Your Co-workers and Classmates
No Happy Environment
University Costs More

For the most part I just use mods to tweak certain things I don't like about the game here and there. I don't have very many that are intended to add actual gameplay. As far as CC, I only use CAS CC, nothing else.
