You can't find static info on it, because it really does vary.
I've had some elders live so long I began to think my game had glitched and they were immortal (they did eventually die, so it wasn't a glitch). I play on long lifespan, so that also matters. There was a tweet by one of the Gurus awhile back that confirmed there is no static lifespan for elders, meaning how long they live is variable and will change from elder to elder. There has been some debate on whether lifestyle matters, but I'm not sure if there was any official word on whether it actually matters if they're fit and eat well, or if those things are just coincidental.
This is the lifespan sheet the Wiki displays.

In short, your town of elders will die off at varying rates. I don't play on Normal lifespan, so I'm unfamiliar with how many days it takes for your elder lifespan bar (the one that counts how many days they have lived) to fill up and start glowing, but however long it takes for that to happen in your game, is when the clock starts ticking for real on your elder sims. They won't die of old age until that is full (at least none of mine ever have). That will be your average for whatever lifespan you're playing on, as they can die at any moment from that marker and forward.
