I delete holidays all the time. I let the the negative moodlet happen. I kind of play it off like not everyone has the greatest winterfest or harvestfest ever. Maybe next year they will have a better time and meet the goals. Sometimes I do like @Stormkeep says and I edit them to fit my liking. I play a lot of single sim households and sometimes I don't want to bother or I'm too busy doing other things with them. Or I plumb forget.
