You can't omit a season but you can vary length. I love Summer and Winter so I play them as two weeks and Spring and Autumn as one. I change these on the first day of each season. This means each week is two months.
Spring = March and April
Summer = May and June then July and August
Autumn = September and October
Winter = Novemeber and December then January and February
Holidays can also be set up so you can choose to have them on the first or second week. When you switch season lengths, the game will remember which week it was in.
Tip: Don't create holidays on the same day in the same season e.g. two holidays on a Saturday in Summer. When you vary the length, one will be deleted or change to another season.
This all means if you make seasons shorter, all holidays will slip into one week and then when you return to two, the holiday will appear in the week you intended/set it up.
