One of my favorite vampires is a top ranked oracle in the criminal career, other vampires are often free lancers who work in their homes during daylight.
In addition to what everyone else has suggested I'd like to see more reaction from other sims when they see a vampire doing bad things. If a vampire drained someone and dropped them unconscious in middle of the dance floor you'd think there would be a stampede for the exits, or at least something more severe than a moment of panic and some reduction of relationship.
