Based on my experience, they're like...mega-moodlets based on your sims' interactions with another sim. For instance, if a sim catches his wife flirting/smooching with another person, there's a chance for him to get the "Wounded" sentiment which makes him sad and miserable around her. New lovers might get the "Smitten" moodlet, where they're always flirty in the other's presence. I don't know if these sentiments can fade over time or not.
