I specifically want to be able to assign Sims to/actively control Sims in NPC jobs in retail and restaurants like with vet clinics. If I can assign more, even better. I also want to get rid of the arbitrary branching barriers. If my Sims want to have both the chef and mixologist branches under their belts, they should be allowed to. Career aspirations are an interesting idea because some aspirations do involve that, but it is generally not that fulfilling to climb to the top of the career ladder in 4. I do think there needs to be more incentives to it, but I am not sure if having an aspiration for every career is the right way to go even if it worked in 3. Career traits might have to be the thing that makes playing renaissance Sims special.
Something I do not want is to take away careers. For example, I do not mind entertainers getting freelance elements or a freelance equivalent, but do not take away the standardized path either. One of interesting things about careers is that there can be so many different variations and paths, so I would want to avoid stripping any of variation it already has.

Yeah I agree all branches should be available.
But I would love to see more freedom in the career titles (to limiting).
Ex. Played my Flamenco Guitarist sim the other day. She works in the Entertainer career and got promoted to Professional Pianist. ? That really breaks the story, I would prefer if there was more neutral career titles / Freedom of the required skill (optional instrument).
Maybe they can add a Freelance Musician + A regular career called Employed Musician? (level up optional instrument to get promoted)
And also: Agree that C&D need a refresh! (I don’t think you are a minority on that, if packs like Dine out / OD was fixed, we would probably hear more requests on C&D).
Do you have any ideas on a C&D Refresh? I can’t find a thread on it.
