I don't have Nifty Knitting yet, but skill gain in general can be boosted by a couple of things.
What mood was your sim in? Being in the right mood/emotion can make a sim skill up faster. The skill bar will glow in the colour associated with that emotion when this happens.
And does you sim live in a tiny house with the skill boost?
