- A town we can build from the ground. It's the closest thing to a custom world we'll probably ever get. I don't understand the question. What is the point of more space? That makes no sense.

I get what you mean about the gallery, It's way more satisfying building your own. So I like to do a build, then save it for future games. :)
I like to get to the point in my saves where every lot has a build I've done myself on it - it's tough to do that on a single playthrough though I find, so I like packaging them up and gathering a collection of my own. Then I can just fill up Newcrest with all my own creations! :) - I'm gonna mimic what others have said. It's easy to make a save file that you can start all your new saves from! That way you dont have to spend time putting new lots in over and over again.
For me I liked the emptiness. Since It got released i've spent hours creating families, houses, community lots, back stories. Its been a great project to have when I get bored of playing live mode. I'm currently trying to make a Newcrest full of floating buildings and tree houses. Kind of like a fantasy world! - I hate how copy and pasted NC is, but i still love all the extra space. I like to practice building so it makes things easy for me, other wise I just go on the gallery. There is no open world in the sims 4, so I never feel like I have to fill it up right away.
- I love Newcrest it is my favorite town, I can make it anything I want, any theme, modern, artsy, old, alien looking anything I want. It does make for a good gameplay as you can have it the way you want, a trailer town, bunker town, underground, camping town with tents only. Use it to make vacation places for your sims. you imagination can go wild. Anyone have any idea how to use Newcrest.
- I like I have an extra template to use to build some things just for the sake of building. I start new games just to build. I filled up Newcrest for my actual game in a few real days. lol I wished we had the ability to place vacant lots in the other worlds. I am always adding to my games, and never stop. :)
ETA: It would be great if we could 'save town' like we did in TS3. - I really enjoyed the addition of Newcrest, even though I only just completed it yesterday. It's my favorite neighborhood, currently. I wouldn't mind more empty worlds. I'm starting to worry about running out of space, but, of course Windenburg is right around the corner.

I do have them all saved. I use the gallery as my own personal simming cloud.
However, as a builder, I usually redo everything so whenever I start a new game, I rethink what I had before and how to make it better. And I'm pretty meticulous in how I go about it. I have binders of drafts, house designs with exterior elevations and interior blueprints. Colored copies, sometimes I even go as far as starting up CAD. LoL. So sometimes it is daunting. I can be lazy, even if I am just filling it with my own lots.
