You can edit the dorms in build mode when no one is living there. If you have students in the dorm you need the enable free build cheat.
You can also alter it when your Sims are in the dorm. It's just a matter of using the bb.enablefreebuild cheat. I just did it, twice, yesterday to replace for a second time the hotpot I put in. Drat that Izzy Famous. I should have him permanently banned from Wyvern Hall, although I'm not aware of a cheat for that. LOL
