I think the biggest scare I had was when there was lot corruption because of For Rent. I have a few rentals, mostly ones I made, I am afraid to change lot types from a residential rental to any other lot type, and sometimes I will want to change a lot and move it elsewhere, or get rid of it, but am now afraid to do so on my main save, or my main scenario save. I want to down load more residential rental and make more of my own, but now I am afraid to do so. So far I have only experienced lot corruption in practice lots, but I still won’t change the ones I have in my main save after the white screen corrupt problem in a practice save. This I consider game breaking. Anyone know if lot corruption has actually been fixed yet?
one time after a patch ( a few years ago ) there was a problem where with aging off your sim could still age. That I considered game breaking, but they fixed that one quickly. I still worry about it coming back.
Plants going to dirt piles used to be a problem in my game for quite awhile, till I found out there was a cheat for that one, so it’s only mildly annoying now.
Dine out had an issue being able to pick the table you wanted your sims to sit at, then it had a problem where you could order only one thing from the menu, if a sim grabbed a glass of water, they couldn’t get anything to eat. I just pretty much stopped playing restaurants…. I will have to try them again someday I guess. That was pack breaking for me.
Over all, Lot and world corruptions….. and people aging with aging turned off are the biggest problems I have experienced. I do a lot of save as now…..I’m still worried they haven’t fixed the lot and world corruptions that happens when removing rentals.

Agreed with you that the lot & world corruption is the biggest and scariest problem. That's because it sometimes didn't show up at first time but hid in the shadow until it was too late to turn back.
I haven't experienced this corruption until now, maybe because I never touch rentals. If I want to try the rental residential lot, I may make a copy of the game folder. But I don't want to waste time playing with a paranoid mind. There are many parts of the game to focus on because I only started playing seriously in 2019.
About Dine Out, I had used "Dine Out Reloaded" mod for a while to help the restaurant work properly. But after V.4, some new functions were too risky to use (Ex. add Bar function+add employee slots), so I removed them and avoided using Dine Out for now.
Plants bug doesn't bother me too, I don't mind using cheat and it's easy. Now I only worry about things that no mod can help right now.

I don’t use mods, even though I’m on a gaming laptop, so anything they can cheat away ( like lifestyles etc. ), is a help to me.

If the game have more toggle on-off of things I want to disable, I would have to get many mods. At least, Neighborhood Stories can be turned off completely.
Your choice for not using mod is the safer way to play. You can update the patch without too much worry like heavy mod players. I'm in the middle of them, just want to make sure I understand what affects will be added each tine.
